Two seasons
The artichoke has a short season in autumn and a longer one in spring. Its cultivation in the area goes back to Andalusi times, and its fame spread across Spain in the 1980s.
Tinned, no tricks
PGI artichoke in tins is only packed in a glass jar and without acidifiers or acidity correctors, to keep its natural flavour. You will find it as whole hearts or in halves.
Good for everything
It provides fibre, phytosterols and flavonoids, helps digestion and is a great ally for a light diet.
- Sautéed with ham and a drizzle of oil.
- Battered or in tempura as an aperitif.
- In menestra, the great dish of the Ribera.
- Confit in oil at a low temperature.
